Beef Dishes

 

Spicy Fried Ginger Beef (Pad Neua Gaeng On) [Serves 4]

 

Ingredients

1 lb. lean beef

3 green onions, in 1/2" pieces

1 Tb. fish sauce

3 Tb. peanut oil

2" piece ginger, julienned

1 tsp. sugar

4 med garlic cloves, thinly sliced

1 Tb. fresh lime juice

1 Tb. cilantro, minced

4 green serrano chilies, slivered

Directions

Use top round or sirloin; thinly slice and cut into ½” x 2” strips. Pat meat dry. Heat oil in wok over medium-high heat. Add garlic and stir-fry until lightly golden. Add chilies, green onion and ginger and stir-fry 1 minute. Add beef and stir-fry until just browned, about 1 minute. Blend in lime juice, fish sauce and sugar. Arrange in heated dish. Sprinkle with cilantro.
