Thai Pork Satay [8-10 servings]

 

Ingredients

10 whole bl/ack peppercorns

2 stalks fresh lemongrass, thinly sliced

1/2 tsp. turmeric

1 tsp. whole coriander seeds

2 slices galangal, diced (2 Tb)

2 tsp. fish sauce

1/2 tsp. salt

6 Tb. water

1/2 tsp. salt

1/2 onion, diced

2 lb. pork tenderloin

7 cloves garlic, halved

1/2 tsp. ground cumin

Directions

Put peppercorns, coriander, cumin and ¼ tsp. salt into mortar. Grind until almost a powder. Put into blender. Add lemon grass, galangal, garlic, onion and water. Process until mixture forms a smooth, thick paste.

Cut pork into ¼" thick slices. Pound until 1/8" thick. Put into large bowl and add turmeric, fish sauce and ½ tsp. salt. Add 5 Tb. of marinade and mix well. Refrigerate for 1 hour.

Thread pork onto wooden skewers. Grill or broil, 6" from heat source, brushing with oil and a little milk to prevent drying, for 2 minutes. Turn, cook second side 2 minutes. Serve immediately with peanut sauce and cucumbers.
